I love chocolate chip cookies.  Chocolate chip cookies and brownies are among my favorite desserts.  Of course, since overhauling my diet and in an effort to feed my kids real whole foods, the traditional chocolate chip cookies are reserved for special treats.

HOWEVER,  there are so many amazing and easy to make alternative, whole food based cookie options to satisfy the cravings.

These cookies were gone in a heartbeat. Even Jordan, who doesnt love oat based recipes, was really into it.  I think he may have had 2 or even 3.  Since the recipe is low in sugar and has nourishing ingredients like oats and almonds, I feel good about my kids eating foods like this that are traditionally thought of as “dessert.”

In fact, we had them for breakfast too.

Some of the beneficial ingredients in this recipe include:

  1.  Almond flour and almond butter:

    • Almonds are a nourishing, blood building food.  They build strength and immunity.  They are a healthy source of fat, magnesium, phosphorous, protein, and vitamin E.
    • The oils and fatty acids of almonds calm the mind and muscles.
    • Almonds nourish the following tissues:
      • Bone
      • Marrow
      • Msucle
      • Reproductive
      • Plasma
  2. Oats:

    •  Like almonds, oats are an immune building food. They also support stamina and satisfy us when we are hungry.
    •  Oats contain insoluble and soluble fiber supportive health digestion and elimination.
    • Oats nourish blood plasma.

3. Coconut oil is:

    • Lubricating to the digestive tract.  It can alleviate dryness that leads to constipation.
    • Cooling and supportive when summer heat elevates heat in the digestive tract and our skin.
    • Calms the nerves, yet boosts metabolism and supports the thyroid.
    • Strengthens the liver and boosts immunity.

The original recipe from Erin Lives Whole calls for Peanut Butter.  I replaced this with almond butter.  I dont use peanut butter based ingredients anymore.  I swap almond butter.  Peanuts are difficult to digest.  They are technically not a nut.  They are a legume.  They are not an ideal food for anyone with weak digestion.

Peanuts are also OILY and HOT. For those with acne and skin issues, peanuts will further increase these qualities in the digestive tract and aggravate the imbalances further.

Peanuts are also very HEAVY. Those struggling with weight or mucus should reduce or avoid excess HEAVY quality in their diet until they are more balanced.

We all enjoyed these cookies tremendously.  I made them last night and they were gone by morning.  So nice when a recipe feeds a sweet tooth, but can also be enjoyed in the morning with a hot drink.  These were nourishing, satisfying and made us so happy all at the same time.

I Will definitely be making these again.
